Why are Jews sometimes with 'jokes' related with money in which they are made out to be greedy - isn't this disrespectful?

It is disrespectful, but I don't think that it is made about the Jews being greedy, but more so because they are seen as being 'mean' with their money.
I think it's more a case that Jewish people tend to be more careful how they spend their money, and don't tend to be reckless with it.
I think they just tend to know how to save and spend their money better as a race, than others, in my opinion.
