Low Cost Barbecue

The secret to backyard entertaining without breaking the bank is to build the meal around foods that are good values or sale items. Pantry items and ingredients that add multiple flavors with one stroke complete the package.[..]

For the sauce:

6-ounce can basil-garlic flavored tomato paste (or a 6-ounce can of tomato paste mixed with a teaspoon of prepared pesto)

2/3 cup balsamic vinegar

1/4 cup olive oil

2 teaspoons minced garlic

2 teaspoons sugar

1 1/2 teaspoons salt

1 teaspoon freshly ground black pepper

For the chicken:

5 pounds chicken thighs and drumsticks

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

I think that is a good idea for a low cost bar-b-que sauce. One of the nice things about where I live there is a real good bar-b-que sauce called "cookies" that my family likes. I use their sauce and buy it by the half gallon.

To me barbecuing some meat is about as cheap as you get. Most people already have the sauce and you just cook the meat. The cost is when you have friends over with a big appetite!

A nice recipe, we should start a thread for good meat rubs. I will have copy one down that I use for ribs it is good. Also remember to warm you meat up before bbqing lets the spices in as it warms and cooks more tender. Also remove all that unwanted excess water our food companies love soaking into our meats.

While BBQing is good nothing beat some nice ribs or steaks that have marinated in spices over night or all day before throwing them on the grill. A rub is good too but I prefer the marinate or even injecting some spices into the meat. smile.gif

I knew I would find my servants busy here talking about cooking and barbque too, my favorite. Make sure the meat is well cooked and the salad tusk. I usually have mine with steak sized fries thanks.
