Over time, you start having the same problems you would if there wasn't enough oil in there in the first place. Parts heating up and wearing down due to friction, even an engine lockup if things progress too far. One of the most certain ways to kill your car without getting into an accident is to neglect its oil.

It is notable that most oil change stations encourage you to come back and change oil a lot sooner than is actually needed (I wonder why, /sarcasm) Pay attention to your car's manufacturer recommendations before you do the stickers they slap on your windshield.

That's true although modern oils are supposed to work at both the cold and hot temperatures. It would really have to be bitterly cold for an extended period to warrant changing engine oil to match cold temperatures.
