Summer Treats

I get reciepes emailed to me from Land O Lakes ~ this one sounded OH SO GOOD!
Do you have a favorite or two/three???

BERRY SOUR CREAM SHORTCAKE

Shortcake is always a summer favorite. Vary by using different fruit combinations, according to availability.

Preparation 20 min.
Baking 20 min.
Cooling 10 min.

Shortcake Ingredients:

2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup cold LAND O LAKES® Butter
1/2 cup LAND O LAKES® Sour Cream
1 egg
1/3 cup milk
1/2 teaspoon almond extract
Fruit Ingredients:

4 cups fresh fruit (sliced peaches and/or raspberries)
1/2 cup sugar
2 tablespoons Amaretto liqueur, if desired (use 2 tsp. Almond Extract instead)
Sweetened whipped cream, if desired

Instructions:

Heat oven to 400°F. Combine flour, sugar, baking powder, salt and baking soda in large bowl; cut in butter until mixture resembles coarse crumbs.

Combine sour cream and egg in small bowl. Add milk and extract; mix well. Add to flour mixture; stir well.

Spoon batter into greased 9-inch round baking pan. Bake for 20 to 25 minutes or until golden brown. Cool 10 minutes. Remove from pan.

Meanwhile, combine fruit and sugar in large bowl. Stir in liqueur, if desired. Cover; refrigerate until serving time.

To serve, cut shortcake into wedges. For each serving, cut a wedge in half; place bottom half on serving plate. Spoon 1/4 cup fruit mixture over cake; top with remaining shortcake wedge. Spoon 1/4 cup fruit on top. Serve with whipped cream, if desired.

TIP: Extra shortcake wedges can be frozen in resealable plastic food bags. To thaw, microwave 1 wedge at a time 20 to 30 seconds on HIGH before splitting and topping with fruit.

Treats Summer

LDS, this sounds like something you can give a try, you may have to look for a substitute for sour cream though. By the way, don't look at the calories - it is a sin.

This is a good recipe for sauce for your ice cream, great in the hot weather!

Thick chocolate sauce

Ingredients required

1 oz/25g of dark chocolate
2 tablespoons of whipping or double cream
1/4 pint/ 150ml of milk
2 tea spoons of cornstarch/ corn flour


method

1.Put the cornstarch/cornflour into a bowl, and mix to a smooth runny paste with 1 tablespoon of the milk.

2. Put the rest of the milk into a sauce pan, add the chocolate, and stir on a low heat until the chocolate melts.

3. Take it off the heat, and slowly pour in the runny cornstarch paste, and add the cream.Return to a low heat, stirring continuously, until the sauce is thick and creamy.

4. Pour immediately over your ice cream, to prevent a skin forming.

There are probably other things that you can try, such as white chocolate or milk chocolate, but I haven't tried these.
