I'm a vegetarian but that sounds yummy, I would add some onions and green or red peppers smile.gif

I agree with LDS, it sounds delicious and some onions and peppers would make it even more yummy. I prefer the red ones, they are sweeter.

This reminded me that I have some young missionaries coming by this evening to pick up a meal so I had to run down to the freezer in my basement to pull out some meat. Thanks for the reminder! biggrin.gif

I laughed yesterday, when my Husband told me what we were eating!

1 packet of microwavable egg fried rice
1 tin of spam

He microwaved the packet rice for 1 1/2 minutes, then put it in a frying pan.
He then chopped the spam into tiny cubes and fried it with the egg fried rice.

The whole process took him less than 5 minutes, and made a great tasty snack!

Here's one our family likes and is pretty simple to make. We call it Tater Tot casserole.
Brown one pound of ground beef, or other meat of your choosing, drain. Put into a square baking dish and mix with one or 2 cans of cream of mushroom soup. Then to make it super potatoey, I put the tater tots vertically in the baking dish to maximize how many potatoes I can get on it. Then I bake according to the tater tot instructions. The last 5 minutes, I take the casserole out and add shredded cheddar cheese to the top.
Makes a great meal and you can add peas or some other veggie and you can make for potlucks or make in an even larger dish and freeze for later!
Super easy and my family loves it!
