I think Montezuma would be one for sure. He actually had the fortitude to stand to Cortes. For a more modern Role-playing Game I think Pancho Villa would be another excellent choice.

Only legendary person I thought of when I saw this was speedy Gonzales but I am not sure he was a real Mexican.
