Recipe Ingredients Recipe details:

4 (10 ounces each) potatoes

12 oz Ground turkey

1 md Onion; chopped

1 md Green bell pepper, chopped

1 c Sliced mushrooms

1 Jar or can marinara sauce

-OR- other vegetarian -- spaghetti sauce -- (14 or 15 ounces) Salt and pepper, to taste 1/4 c Chopped parsley

1/4 c Grated Parmesan cheese

Pierce potatoes with tines of fork; microwave on HIGH 20 to 22 minutes until potatoes are fork-tender. Meanwhile, in large nonstick skillet over medium heat saute turkey until no longer pink, about 6 minutes. Add onion, bell pepper and mushrooms; saute, stirring, 3 minutes. Stir in marinara sauce; bring to boil, reduce heat, cover and simmer 10 minutes. Season with salt and pepper; stir in parsley. Place potatoes on 4 plates; split and fluff. Top potatoes with turkey mixture and cheese, dividing equally. NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven. Menu: Coleslaw, Fruit Cocktail Nutritional Information Per Serving: 400 calories; 12 g fat; 40 g cholesterol; 800 mg sodium; 65 g carbohydrate; 7 g fiber; 23 g protein.
