| 1/4 | cup | mayonnaise | |
| 1 | tablespoon | red pepper, roasted, drained, chopped or pimiento, optional | |
| 1 | tablespoon | onion, finely chopped | |
| 1 1/2 | teaspoon | cider vinegar | |
| 1 | teaspoon | mustard, dijon-style | |
| 1/4 | teaspoon | salt | |
| 1 | pepper, to taste | ||
| 1 | each | potato, idaho, baked, cubed | |
Directions: | |||
| In small bowl combine first seven ingredients; mix well. Add potatoes; toss to coat well. Cover; refrigerate. Makes 1 serving. | |||
