I tend to freeze meat and then use it withing 2-5 months. I tend to make sure I rotate any frozen food I buy. I like to buy fresh cut meat and freeze it until later. I usually thaw meat by placing it in a refridge for a couple days before using it. This helps the food be rotated through the weeks.
I don't refreeze meat, but that because freezing over and over changes the texture and consistency of meat and most other things. As for the other rules, absolutely spot on.
