Have the tongue sliced thinly (approximately 3mm - 4mm) and cook very quickly over a small grill sprinkling a small amount of salt on them. Once cooked, squeeze a lemon over the meat and enjoy.
One of the best things is that if it is sliced thinly, most people have no idea what they are eating, so those who might reject tongue if it looked like a tongue can actually enjoy some before they find out!
I get the opportunity to eat beef and pork tongue here in Asia. As long as it doesnt really look like a huge cow or pig tongue, I dont have a problem eating it. I would believe that it was probably irradiated and then what we get here in Asia was marinated with salt and lemon. If it gets much past 1/4 inch thickness, you pretty well know what it is by just looking at it.
Actually washing meat in a vinegar kills all and prepares it for the seasoning. I also enjoy Cod tongues they are tradition in the Eastern coast.
It works well in stews as well. I have never really understood why people react just as it looks like a tongue or heart. I guess it is because I grew up killing the animals so you associate the things differently.
