3 lb Lean beef chuck roast

3 slices Lean bacon chopped

1 tsp Minced garlic

1 tsp Crumbled oregano

1/2 tsp Salt

1/4 tsp Fresh ground pepper

1 tbsp Margarine

1 tbsp Olive oil

1/2 c Chopped onion

1/4 c Chopped carrots

1/4 c Chopped celery

1/2 c Dry red wine

2 c stock canned or made -- from bouillon cubes

1 1/2 c Canned tomatoes pureed or -- coarsely chopped

1 ea Bay leaf

2 tbsp Soft butter optional

2 tbsp Flour optional

chilled. Top each portion with 1/4 cup chopped watercress. Makes 11 one-cup servings. Nutrient content per serving: 225 calories, 2 grams fat, 4 grams protein, 50 grams carbohydrate, .6 milligrams cholesterol, 509 milligrams sodium, .4 milligrams beta carotene.
