Many cattle have adopted to the heat and the cold of the lands they live in. Messing with the genetics of a cow can really mess with the taste and the safety of the meat. Some things we should not mess with.

Eventually, we won't have to worry bout eating our distant cousins to survive. We are already developing technologies that create meat-like products from base cells, and will not need to harvest (Ie kill) animals for our sustenance. From that point forward, anyone who kills an animal for food will be considered barbaric and cruel and ostracized from human society. At least, that's what I'm hoping will occur. :D.
