My players got the idea pretty quick one trip when all they had was a couple of hunted rabbits to eat and no means to cook the things. Half of them ended up with food poisoning that made the next encounter… interesting.

If possible I think its good for all players to buy the essentials and then select one unique item they will buy in case its needed so at least the party has it just in case.
