One of the "Foodways" unique to Tennessee, and especially Nashville (where I live) is called "Hot Chicken." It is Battered and Fried chicken dusted with a very spicy mix into the batter and sometimes sprinkled on after cooking. It is different than "Buffalo Wings" because they are covered in a sauce.
Hot chicken is generally served by the quarter, with people having the choice of a Breast Quarter (Breast and wing) or a Thigh Quarter (Thigh and Leg). It is nominally an open-faced sandwich because it is placed on a piece of regular sliced white bread. You cannot eat it this way, as it is bone-in. It is also generally served with pickles.
One of the most famous places to serve this unique food is "Prince's Chicken," though it has become more popular in recent years.
